$95 is normally WAY outside of my price range for wine...but I really wanted to try the Inniskillin Cabernet Franc Ice Wine. Apparently, when you spend that much, you get a box for your wine:



Any suggestions for what dessert would go well with this wine?

I'd look into some kind of chocolate dessert.

Specifically, dark chocolates and dark chocolate desserts. The wine is really terrific with today's trendy single-varietal, high cacao content chocolates like those from Vosges, Sharffen Berger, Cluizel, etc. At least 68% if not higher. You need all of those tanins to work with the wine.

Many ice wine afficionados would suggest enjoying the wine as dessert.

In justifying the price, it might help you to know that Cabernet Franc grapes are a particularly weak-stemmed variety and, as they hang on the vine into winter, susceptible to being knocked to the ground by wind or snow. Accordingly, the yield of this variety is extremely low - something like 5 percent per acre compared to a table-wine harvest. It is that which makes this ice wine so rare and special. And expensive. But it's worth every penny.
