Care for a Cabernet?

Today is Cabernet Day!! Cabernet is one of those grapes that grows well all over the world - South America, Australia, New York, California, Virginia, and of course France. The grape is very durable and adapts to various climates well.

Genetic testing has shown that Cabernet Sauvignon came to life in the 1600s when nearby plants of Cabernet Franc and Sauvignon Blanc happened to fertilize each other.

Cabernet Franc is lighter and fruitier than its Cabernet Sauvignon relative, and often has cherry, blackberry, and vanilla aromas. The tannin is soft and gentle, and the finish is smooth. Cabernet Sauvignon, on the other hand, is characterized by a higher tannin content which serves to provide structure and intrigue while supporting the rich fruit characteristics. The flavor profile includes plum, cherry, blackberry, blueberry, warm spice, vanilla, tobacco and sometimes leather aromas and or flavors.

Because Cabs take a bit longer to reach maturation, allowing their flavors to mellow, they are ideal candidates for both ageing and for blending with other grapes, primarily Merlot. This blending softens the Cabernet, adding appealing fruit tones, without sacrificing its innate character.

Cabernet goes well with beef, lamb and goose, especially when cooked with herbs. It also is a great match for brie, cheddar cheese and chocolate.
