Château Pontet-Canet is famed for their great wines and for doing everything they can to let the true nature of the grapes shine through their wine.
To that end, they have started experimenting with cement barrels. A portion of their wine will now be aged in the cement barrels pictured above. The idea is to remove the flavors that oak imparts on the wine and to showcase the fruit, tannis and acidity that are native the grapes.
It wil be interesting to see how this type of aging, even of a small portion of the wine, will impact the flavors of the wine.
